Loaded Baked Potato Soup

This soup is rich so I advise not eating the whole pot at once if you can help it! You will love this, though. It is the perfect cozy/lazy day recipe :)!

LOADED BAKED POTATO SOUP:
1/4 cup vegan butter
1/4 cup flour
2 cups non-dairy milk
2 medium potatoes, chopped
1 cup veggie broth (if needed)
salt & pepper
1 tbsp vegan sour cream/ vegan cream cheese (optional)
1/4 cup green onion, chopped
vegan cheddar cheese, coconut bacon, green onion for topping
